Cashew Chicken with Cauliflower Rice
When changing your diet, you discover the things you miss the most. For me, this would be pizza, mac ‘n cheese, grilled cheese sandwiches, ice cream and chinese food. You can either give in to the cravings or you can find suitable substitutions to create some of these dishes without straying too far from your diet. I have found an option for pizza (Homemade Pizza with Tapioca Starch Crust) and now chinese food with Cashew Chicken with Cauliflower Rice. Unfortunately, I still fall for a real grilled cheese sandwich at least once a year. Ice cream? ….well, that’s at least once a month for both my husband and me.
The photo above has some added broccoli, red pepper and mushrooms, but the recipe doesn’t include it. Feel free to add any extra veggies you may have laying around, as I did here.
I had some cauliflower rice that I pulled from the freezer to serve this with, which goes perfectly.
Never made cauliflower rice? It’s simple…
Cut a head of cauliflower into chunks and put it into your blender/chopper. Chop it until it is the consistency of rice. Don’t over chop it or it will become mush. You may have to do this in a few batches, depending on the size of your blender and cauliflower head.
Once it’s all chopped, you can either steam it in a bowl (covered) in the microwave for a few minutes until cooked through OR you can heat it in a pan/pot until cooked through.
When your Cashew Chicken looks like it does in the photo below, it’s ready to be poured over your cauliflower rice.
